The Basics​

Fish tastes better when paired with white wines because the wine’s acidity brings out the fish’s freshness. Because white wine is acidic, it can improve the flavor of fish in a similar way to how lemon is squeezed over fish. The herbal and earthy flavors of aromatic whites make them a perfect match for green veggies like peas. Sauvignon Blanc, with its green bell pepper and grassy aromas, goes quite nicely with peas.

One of the simplest, easiest-to-remember wine pairing advice pieces that will enable you to provide recommendations quickly is that red wine complements red meats like steak very well since it helps to bring out the taste of the fat and soften the meat’s proteins. Red wine contains a chemical called tannin, which causes the meat to soften. Red wines go nicely with earthy, savory veggies like lentils, sweet potatoes, Swiss chard, and mushrooms.

As an example, when you pair the Pinot Noir, Les Alliés, France, 2019, with the Grilled Halloumi Cheese, you achieve a perfect balance of flavors. The wine’s earthy undertones complement the grilled halloumi, and its delicate acidity offers a welcome counterpoint to the cheese’s richness. 

A white wine pairing could be Bibb Lettuce Salad with Riverbank-Beaucanan Estate Chardonnay, California, 2018. The salad’s vinaigrette and nutty almond flavor are wonderfully complemented by the Chardonnay’s buttery texture and zesty undertones. These are only a couple of good wine pairings. However, there are many more that can be made.
